Chefs have long considered the ever-versatile oyster the darling of the sea, a briny sweet delicacy perfectly attuned to numerous cuisine styles. Low country fishermen have plied local waters for centuries. One circa 1900 Mount Pleasant trawler came up repeatedly in our research: The Darling. Another frequent find: J.S. Darling & Son of Virginia, a turn-of-the-century business that processed oysters.
